Sandy/Ivy can take 2000+mHz memory. Intel's spec sheet is just that. Most people with Sandy/Ivy use 1600mHz as that is the performance/price sweetspot. Including mysely, my e3-1230 (the Xeon equivalent of a i7-2600 only "supports 1066/1333", and I'm happily using 1600. Aug 8, 2012.

8 GB is starting to not be enough, so I'd take the 16 GB. 3 years ago, I'd have opted for the 2400 MHz 8 GB, as 8 GB was sufficient, and faster ram does help. Put on a good pair of headphones or hook up a nice set of speakers with tweeters, and tell me if 16 KHz isn't a bit less obnoxious than 8 KHz. It sure is for me; if that means my hearing is crap, then so be it, I still want to use 16.
You want 5 KHz of audio then sample at 10 KHz. Fine for voice. You want higher fidelity music than most folks can hear then sample at 40 KHz or so to get 20+ KHz. One more tidbit is sampling vs bitrate.
